Hold on a minute – bishul akum only applies to food that requires cooking. A food that is normally eaten raw is not affected by bishul akum. Now, if halacha recognizes that sushi fish is eaten raw, then there is no bishul akum by fish such as salmon or tuna etc.

You can’t have it both ways!

as long as it is normally eaten raw. so sushi isnt a problem. neither are cucumbers or tomatos. raw meat might be a problem tho since no one eats it raw.

Why would sushi even be a question? Of course you can give sushi, lechol hade’os. You can also give steak tartare, lechol hade’os. The shiur is only about whether you can give food that needs cooking, which these things don’t.
